A wooden hammer with cloth padding is a pretty common practice weapon. If you can get a post maul from someone who sets up fences or a carpenter's mallet you're most of the way there.

The two work out some logistics, like arranging for practice weapons. Popp offers to find someone to make a proper one because Gaia doesn't really know what to ask for, and secretly makes said practice hammer. Gaia won't think to question this though she'll probably say it's nice and better than what she probably could have gotten or assembled.
The actual sparring took place in an out of the way field and would have been pretty evenly matched. Popp's general battle sense, experience and experience in training versus Gaia's variety, awkwardness in how to balance her attacks for sparring and innate skills; also given the power limitations imposed by being summoned to this world.
Plenty of showcased skills, like Gaia being able to place activation delay on her spells, shadow-infused fire and teleportation and Popp's own magic and teleportation tricks. Overall the results were a draw, and both definitely took their licks. Any argument for 'old fashioned sexism' causing this pretty much went out the window after the first exchange of blows.
Sephiroth was watching in the wings and was ready with first aid.
